Ingredients:

  • 400g chicken breast fillets 
  • 1/2 small red onion, finely chopped 
  • 1 tbsp dijonnaise 
  • 8 slices wholemeal bread 
  • 160g gouda cheese, thinly sliced 
  • 40g baby rocket leaves 

Instructions

  1. Place chicken in a small saucepan. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low and simmer for 5 to 7 minutes. Remove from heat. Cover and stand for 5 minutes. Remove chicken from pan. Allow to cool slightly. Coarsely chop chicken. Combine chicken, onion and dijonnaise in a bowl.
  2. Preheat grill on high. Grill bread for 2 minutes each side or until browned.
  3. Top toast with chicken mixture and cheese. Grill for 2 minutes or until cheese is melted. Top with rocket leaves. Serve.
