Salmon balls

Heres a healthy take on meatballs – salmon balls. High in omega 3s, theyre quick to make and super easy to eat!

To make this dish at home by prescription from the author Gomer would need: 1 medium orange sweet potato , peeled, coarsely chopped, 210g can red salmon , drained, flaked, 1/4 cup cottage cheese, 2 tbsp finely chopped red onion, 1 tbsp chopped flat-leaf parsley , 1 tbsp lemon juice, 2 tbsp wholemeal plain flour, 1/2 cup wholemeal dried breadcrumbs .
Ingredients:
- 1 medium orange sweet potato , peeled, coarsely chopped
- 210g can red salmon , drained, flaked
- 1/4 cup cottage cheese
- 2 tbsp finely chopped red onion
- 1 tbsp chopped flat-leaf parsley
- 1 tbsp lemon juice
- 2 tbsp wholemeal plain flour
- 1/2 cup wholemeal dried breadcrumbs
Instructions
- Cook the sweet potato in a medium saucepan of boiling water for 10 minutes or until tender. Drain well. Return to the pan and use a fork to mash until smooth.
- Preheat oven to 180°C. Line an oven tray with baking paper. Combine the sweet potato, salmon, cottage cheese, onion, parsley, lemon juice and flour in a medium bowl. Divide mixture into 16-20 portions and shape each portion into a ball. Place the breadcrumbs on a plate. Roll each ball in the breadcrumbs and place on the lined tray.
- Bake for 10 minutes or until golden brown and heated through.
