This delicious Asian-style coleslaw makes a healthy side dish to serve with fish or chicken.

To make this dish at home by prescription from the author Gomer would need: 300g cabbage, thinly shredded, 1 large carrot, coarsely grated, 2 green onions, thinly sliced, 300g edamame beans, podded, 1/2 cup fresh coriander, coarsely chopped , 50g snowpea sprouts, trimmed, 1 small roasted garlic clove, 3 tsp tahini , 3 tsp avocado oil, 3 tsp rice wine vinegar, 3 tsp extra-virgin olive oil, 2 tsp maple syrup, 2 tsp white miso paste, 1/2 tsp sesame oil.

Ingredients:

  • 300g cabbage, thinly shredded 
  • 1 large carrot, coarsely grated 
  • 2 green onions, thinly sliced 
  • 300g edamame beans, podded 
  • 1/2 cup fresh coriander, coarsely chopped 
  • 50g snowpea sprouts, trimmed 
  • 1 small roasted garlic clove 
  • 3 tsp tahini 
  • 3 tsp avocado oil 
  • 3 tsp rice wine vinegar 
  • 3 tsp extra-virgin olive oil 
  • 2 tsp maple syrup 
  • 2 tsp white miso paste 
  • 1/2 tsp sesame oil 

Instructions

  1. Make dressing. Combine all ingredients in a large bowl.
  2. Add cabbage, carrot, onion, coriander, sprouts and edamame to dressing. Toss to coat.
