Miso coleslaw

This delicious Asian-style coleslaw makes a healthy side dish to serve with fish or chicken.

To make this dish at home by prescription from the author Gomer would need: 300g cabbage, thinly shredded, 1 large carrot, coarsely grated, 2 green onions, thinly sliced, 300g edamame beans, podded, 1/2 cup fresh coriander, coarsely chopped , 50g snowpea sprouts, trimmed, 1 small roasted garlic clove, 3 tsp tahini , 3 tsp avocado oil, 3 tsp rice wine vinegar, 3 tsp extra-virgin olive oil, 2 tsp maple syrup, 2 tsp white miso paste, 1/2 tsp sesame oil.
Ingredients:
- 300g cabbage, thinly shredded
- 1 large carrot, coarsely grated
- 2 green onions, thinly sliced
- 300g edamame beans, podded
- 1/2 cup fresh coriander, coarsely chopped
- 50g snowpea sprouts, trimmed
- 1 small roasted garlic clove
- 3 tsp tahini
- 3 tsp avocado oil
- 3 tsp rice wine vinegar
- 3 tsp extra-virgin olive oil
- 2 tsp maple syrup
- 2 tsp white miso paste
- 1/2 tsp sesame oil
Instructions
- Make dressing. Combine all ingredients in a large bowl.
- Add cabbage, carrot, onion, coriander, sprouts and edamame to dressing. Toss to coat.
