  • 6 medium gherkins, drained, halved lengthways, sliced 
  • 1/2 small red onion, finely chopped 
  • 1/2 tsp finely grated lemon rind 
  • 2 tsp lemon juice 
  • 1 tsp olive oil 

Instructions

  1. Combine dill, gherkin, onion, lemon rind, lemon juice, oil and salt and pepper in a bowl. Serve.
