This traditional Moroccan spice rub is typically used to flavour fish or seafood, but it can be used on other meats or vegetables.

To make this dish at home by prescription from the author Gomer would need: 1 1/2 tsp cumin seeds, 1 tsp coriander seeds, 1 brown onion, halved, coarsely chopped, 60ml fresh lemon juice, 2 tbsp coarsely chopped fresh coriander , 2 tbsp coarsely chopped fresh continental parsley, 2 garlic cloves, chopped, 1 tbsp mild paprika , 2 tsp ground turmeric, Pinch of cayenne pepper, Salt & freshly ground black pepper.
Ingredients:
- 1 1/2 tsp cumin seeds
- 1 tsp coriander seeds
- 1 brown onion, halved, coarsely chopped
- 60ml fresh lemon juice
- 2 tbsp coarsely chopped fresh coriander
- 2 tbsp coarsely chopped fresh continental parsley
- 2 garlic cloves, chopped
- 1 tbsp mild paprika
- 2 tsp ground turmeric
- Pinch of cayenne pepper
- Salt & freshly ground black pepper
Instructions
- Place cumin and coriander seeds in a frying pan over medium heat. Cook, stirring, for 2 minutes or until seeds pop and mixture is fragrant.
- Place the seeds, onion, lemon juice, coriander, parsley, garlic, paprika, turmeric and cayenne pepper in bowl of a food processor and process until finely chopped. Season with salt and pepper.
