Salmon steaks taste even better with this home-made nutty green pesto.

To make this dish at home by prescription from the author Gomer would need: 2 cups fresh breadcrumbs, 1 tsp Maldon sea salt, 4 salmon steaks, skin on, bones removed, Steamed broccolini, to serve, Lemon wedges, to serve , 1 cup baby spinach, 1/2 cup baby rocket, 1/2 cup roasted salted macadamia nuts , 2 garlic cloves, roughly chopped, 1/2 cup extra virgin olive oil, 60g parmesan cheese, finely grated.

Ingredients:

  • 2 cups fresh breadcrumbs 
  • 1 tsp Maldon sea salt 
  • 4 salmon steaks, skin on, bones removed 
  • Steamed broccolini, to serve 
  • Lemon wedges, to serve 
  • 1 cup baby spinach 
  • 1/2 cup baby rocket 
  • 1/2 cup roasted salted macadamia nuts 
  • 2 garlic cloves, roughly chopped 
  • 1/2 cup extra virgin olive oil 
  • 60g parmesan cheese, finely grated 

Instructions

  1. Make pesto: Place spinach, rocket, macadamia nuts and garlic in a food processor. Process (scraping down sides occasionally) until almost smooth .
  2. With the motor running, add oil in a slow and steady stream. Process until all oil is combined. Transfer pesto to a bowl. Add parmesan. Season with salt and pepper. Stir until well combined.
  3. Preheat oven to 200°C. Line a 6cm deep, 20cm x 28cm (base) baking dish with baking paper.
  4. Combine breadcrumbs, pesto and salt in a bowl. Place salmon, skin side down, in prepared dish. Sprinkle 1/2 cup crumb mixture over top of each, pressing on lightly with fingertips.
  5. Bake for 15 to 20 minutes (depending on fish thickness) or until cooked to your liking. Serve with broccolini and lemon wedges.
