To make this dish at home by prescription from the author Gomer would need: 1 1/3 cups dried risoni, 2 tsp lemon rind, finely grated, 2 tbsp lemon juice, 1 tbsp extra virgin olive oil, 2 tbsp fresh flat-leaf parsley leaves, chopped , 1 tbsp chopped fresh chives, 50g baby rocket, torn, Lemon zest, to serve , Lemon wedges, to serve.

Ingredients:

  • 1 1/3 cups dried risoni 
  • 2 tsp lemon rind, finely grated 
  • 2 tbsp lemon juice 
  • 1 tbsp extra virgin olive oil 
  • 2 tbsp fresh flat-leaf parsley leaves, chopped 
  • 1 tbsp chopped fresh chives 
  • 50g baby rocket, torn 
  • Lemon zest, to serve 
  • Lemon wedges, to serve 

Instructions

  1. Cook pasta following packet directions. Drain. Transfer to a heatproof bowl.
  2. Add rind, juice, oil, parsley, chives and rocket. Season well with pepper. Toss to combine. Sprinkle pasta with zest. Serve with lemon wedges.
