To make this dish at home by prescription from the author Gomer would need: 2 tsp light olive oil, 1 tbsp curry powder, 2 x 250g pkts Basmati rice, cooked, 250ml Massel chicken style liquid stock, 150g frozen peas , 150g Tasmanian salmon, flaked, 4 cups baby spinach leaves, 1 lemon, cut into quarters, to serve .
Ingredients:
- 2 tsp light olive oil
- 1 tbsp curry powder
- 2 x 250g pkts Basmati rice, cooked
- 250ml Massel chicken style liquid stock
- 150g frozen peas
- 150g Tasmanian salmon, flaked
- 4 cups baby spinach leaves
- 1 lemon, cut into quarters, to serve
Instructions
- Heat the olive oil in a large saucepan over medium-high heat. Add the curry powder and cook, stirring, for 30 seconds or until aromatic.
- Add the rice and stock and cook, stirring, for 3 minutes or until the liquid is absorbed. Add the peas and salmon, and stir until just combined.
- Divide the spinach among serving plates. Top with the rice mixture and serve with lemon wedges.
