Steamed trout with mango salad

Take advantage of the mango season with this sweet salad which perfectly complements the steamed fish.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp lime juice, plus wedges to serve, 2 tbsp fish sauce, 2 tbsp caster sugar, 2 small red chillies, seeded, finely sliced, 2 firm mangoes , peeled, coarsely grated , 4 x 100g skinless ocean trout fillets, 1 cup coriander leaves, chopped, 1/3 cup chopped mint leaves , 1/3 cup roasted macadamias, chopped.
Ingredients:
- 2 tbsp lime juice, plus wedges to serve
- 2 tbsp fish sauce
- 2 tbsp caster sugar
- 2 small red chillies, seeded, finely sliced
- 2 firm mangoes , peeled, coarsely grated
- 4 x 100g skinless ocean trout fillets
- 1 cup coriander leaves, chopped
- 1/3 cup chopped mint leaves
- 1/3 cup roasted macadamias, chopped
Instructions
- Shake lime juice, fish sauce, sugar and chilli together in a screw-top jar. Toss mango in a bowl with dressing.
- Place fish on a plate in a steamer over a pan of simmering water. Steam for about 5 minutes until cooked but still slightly rare in the centre. Add herbs to mango, place a piece of fish on each serving plate, top with salad and sprinkle with nuts. Serve with lime wedges.
