To make this dish at home by prescription from the author Gomer would need: 8 slices day-old white sandwich bread, Olive oil cooking spray, 2 tsp olive oil, 1/2 small red onion, finely chopped, 500g boneless white fish fillets , cut into 1cm cubes , 1/2 small lemon, juiced, 1/3 cup light thickened cream, 2 tbsp finely chopped chives .

Ingredients:

  • 8 slices day-old white sandwich bread 
  • Olive oil cooking spray 
  • 2 tsp olive oil 
  • 1/2 small red onion, finely chopped 
  • 500g boneless white fish fillets , cut into 1cm cubes 
  • 1/2 small lemon, juiced 
  • 1/3 cup light thickened cream 
  • 2 tbsp finely chopped chives 

Instructions

  1. Preheat oven to 180°C. Trim crusts from bread. Using a rolling pin, roll out each slice until 5mm thick. Spray both sides with oil.
  2. Press each slice of bread into a 1/3-cup capacity muffin hole. Bake for 15 to 20 minutes or until edges are golden and crisp.
  3. Meanwhile, heat oil in a non-stick frying pan over medium heat. Add onion and cook for 3 minutes or until soft. Add fish and cook for 2 minutes. Add lemon juice, cream and salt and pepper. Simmer, uncovered, stirring, for 3 minutes or until sauce thickens slightly and fish is just cooked through. Spoon fish mixture into bread cases. Sprinkle with chives and serve.
