To make this dish at home by prescription from the author Gomer would need: 8 x 150g skinless white fish fillets, 2 tbsp plain flour, seasoned with salt and pepper, 2 tbsp canola oil, Jasmine rice, steamed, to serve, 1/4 firmly packed cup brown sugar , 2 tsp fish sauce, 2 tsp sesame oil, 1 tbsp light soy sauce , 1/3 cup canola oil, Zest and juice of 3 limes, 1/4 cup salted black beans*, rinsed, 1 long red chilli, seeds removed, sliced, 1 red onion, thinly sliced, 2 tbsp chopped coriander, plus extra leaves to serve.
Ingredients:
- 8 x 150g skinless white fish fillets
- 2 tbsp plain flour, seasoned with salt and pepper
- 2 tbsp canola oil
- Jasmine rice, steamed, to serve
- 1/4 firmly packed cup brown sugar
- 2 tsp fish sauce
- 2 tsp sesame oil
- 1 tbsp light soy sauce
- 1/3 cup canola oil
- Zest and juice of 3 limes
- 1/4 cup salted black beans*, rinsed
- 1 long red chilli, seeds removed, sliced
- 1 red onion, thinly sliced
- 2 tbsp chopped coriander, plus extra leaves to serve
Instructions
- Combine dressing ingredients. Set aside.
- Lightly dust fish in flour. Heat oil in a non-stick pan over medium-low heat and cook fish for 2 minutes each side or until light golden and cooked through.
- Serve fish on rice, pour over dressing and garnish with extra coriander.
