To make this dish at home by prescription from the author Gomer would need: 8 x 150g skinless white fish fillets, 2 tbsp plain flour, seasoned with salt and pepper, 2 tbsp canola oil, Jasmine rice, steamed, to serve, 1/4 firmly packed cup brown sugar , 2 tsp fish sauce, 2 tsp sesame oil, 1 tbsp light soy sauce , 1/3 cup canola oil, Zest and juice of 3 limes, 1/4 cup salted black beans*, rinsed, 1 long red chilli, seeds removed, sliced, 1 red onion, thinly sliced, 2 tbsp chopped coriander, plus extra leaves to serve.

Ingredients:

  • 8 x 150g skinless white fish fillets 
  • 2 tbsp plain flour, seasoned with salt and pepper 
  • 2 tbsp canola oil 
  • Jasmine rice, steamed, to serve 
  • 1/4 firmly packed cup brown sugar 
  • 2 tsp fish sauce 
  • 2 tsp sesame oil 
  • 1 tbsp light soy sauce 
  • 1/3 cup canola oil 
  • Zest and juice of 3 limes 
  • 1/4 cup salted black beans*, rinsed 
  • 1 long red chilli, seeds removed, sliced 
  • 1 red onion, thinly sliced 
  • 2 tbsp chopped coriander, plus extra leaves to serve 

Instructions

  1. Combine dressing ingredients. Set aside.
  2. Lightly dust fish in flour. Heat oil in a non-stick pan over medium-low heat and cook fish for 2 minutes each side or until light golden and cooked through.
  3. Serve fish on rice, pour over dressing and garnish with extra coriander.
