Fish with creamy lemon and dill sauce

To make this dish at home by prescription from the author Gomer would need: 2 tbsp extra virgin olive oil, 4 x 200g firm white fish fillets, 1 small head broccoli, cut into florets, 150g green beans, trimmed, halved lengthways, 1 small garlic clove, thinly sliced , 2 tbsp flaked almonds, toasted, 10g butter, chopped, 1 medium brown onion, finely chopped , 1 1/4 cups béchamel sauce, 1/3 cup pure cream, 2 tbsp finely chopped fresh dill, 1 tsp finely grated lemon rind, 1 tbsp lemon juice, Lemon zest and wedges, to serve.

Ingredients:

  • 2 tbsp extra virgin olive oil 
  • 4 x 200g firm white fish fillets 
  • 1 small head broccoli, cut into florets 
  • 150g green beans, trimmed, halved lengthways 
  • 1 small garlic clove, thinly sliced 
  • 2 tbsp flaked almonds, toasted 
  • 10g butter, chopped 
  • 1 medium brown onion, finely chopped 
  • 1 1/4 cups béchamel sauce 
  • 1/3 cup pure cream 
  • 2 tbsp finely chopped fresh dill 
  • 1 tsp finely grated lemon rind 
  • 1 tbsp lemon juice 
  • Lemon zest and wedges, to serve 

Instructions

  1. Heat 1 1/2 tablespoons of the oil in a large frying pan over medium-high heat. Cook fish for 3 to 4 minutes each side or until just cooked through. Cover to keep warm.
  2. Meanwhile, heat the remaining oil in a medium frying pan over medium-high heat. Add broccoli. Cook, tossing occasionally, for 4 to 5 minutes or until golden and just tender. Add the beans and garlic. Cook for 1 to 2 minutes or until beans are bright green and just tender. Remove from heat. Sprinkle with almonds. Cover to keep warm.
  3. Melt butter in a medium saucepan over medium heat. Add onion. Cook, stirring, for 2 to 3 minutes or until soft. Add Béchamel Sauce and cream. Cook, stirring, for 2 to 3 minutes or until hot. Stir in dill, rind and juice. Season (see notes).
  4. Spoon sauce over fish and sprinkle with lemon zest. Serve with broccoli mixture and lemon wedges.
