To make this dish at home by prescription from the author Gomer would need: 6 baby potatoes, 2 x 175g ling fillets, 1/8 rockmelon, peeled, finely chopped, 200g seedless watermelon, peeled, finely chopped, 1/2 long red chilli, deseeded, finely chopped , 1 tsp finely chopped basil, 1 tbsp extra-virgin olive oil, plus extra to drizzle, 1 tsp lime juice .

Ingredients:

  • 6 baby potatoes 
  • 2 x 175g ling fillets 
  • 1/8 rockmelon, peeled, finely chopped 
  • 200g seedless watermelon, peeled, finely chopped 
  • 1/2 long red chilli, deseeded, finely chopped 
  • 1 tsp finely chopped basil 
  • 1 tbsp extra-virgin olive oil, plus extra to drizzle 
  • 1 tsp lime juice 

Instructions

  1. Steam potatoes in a large steamer over a saucepan of boiling water for 15 minutes. Season fish and place each fillet on a small piece baking paper. Place fish on potatoes. Steam potatoes and fish for another 15 minutes or until potatoes and fish are cooked.
  2. Meanwhile, combine melons with chilli, basil, oil and lime juice. Season and gently toss to coat.
  3. Place fish and potatoes on 4 serving plates. Spoon over melon salsa and drizzle with extra oil if you like.
