To make this dish at home by prescription from the author Gomer would need: 500g chat potatoes, halved, 1 1/2 tbsp olive oil, 2 garlic cloves, crushed, 1/3 cup chopped fresh rosemary leaves, 1/4 cup firmly packed chopped fresh continental parsley , 1/2 tsp salt, 1/4 tsp fresh ground black pepper, 4 blue-eye trevalla cutlets , 25g butter, 200g green beans, trimmed.

Ingredients:

  • 500g chat potatoes, halved 
  • 1 1/2 tbsp olive oil 
  • 2 garlic cloves, crushed 
  • 1/3 cup chopped fresh rosemary leaves 
  • 1/4 cup firmly packed chopped fresh continental parsley 
  • 1/2 tsp salt 
  • 1/4 tsp fresh ground black pepper 
  • 4 blue-eye trevalla cutlets 
  • 25g butter 
  • 200g green beans, trimmed 

Instructions

  1. Preheat oven to 230°C. Line a baking tray with foil. Place potatoes on tray. Combine 1 tablespoon of oil with garlic. Drizzle over potatoes and gently toss to coat. Bake for 20-25 minutes.
  2. Meanwhile, combine rosemary, parsley, salt and pepper on a plate. Press each fish cutlet in herb mixture to coat both sides.
  3. Heat remaining oil and half the butter in a frying pan over medium-high heat. Add fish and cook for 2 minutes each side or until just cooked through. Transfer to a plate and loosely cover with foil to keep warm.
  4. Melt the remaining butter in a frying pan over medium heat. Add the beans and cook, tossing occasionally, for 3-4 minutes. Serve fish with potatoes and beans.
