To make this dish at home by prescription from the author Gomer would need: 500g potatoes, peeled, coarsely chopped, 50g butter, 2 cloves garlic, crushed, 2 tsp finely chopped fresh rosemary, 2 tbsp chopped fresh chives , Finely grated zest of 2 lemons, 500g smoked cod fillets, 3 cups milk , 1/4 cup wholemeal plain flour, 2 eggs, lightly beaten, 2 cups fresh wholemeal or whole grain Breadcrumbs, Vegetable oil for shallow frying, Salad and lemon wedges, to serve.

Ingredients:

  • 500g potatoes, peeled, coarsely chopped 
  • 50g butter 
  • 2 cloves garlic, crushed 
  • 2 tsp finely chopped fresh rosemary 
  • 2 tbsp chopped fresh chives 
  • Finely grated zest of 2 lemons 
  • 500g smoked cod fillets 
  • 3 cups milk 
  • 1/4 cup wholemeal plain flour 
  • 2 eggs, lightly beaten 
  • 2 cups fresh wholemeal or whole grain Breadcrumbs 
  • Vegetable oil for shallow frying 
  • Salad and lemon wedges, to serve 

Instructions

  1. Cook potatoes in large pan of boiling water until tender. Drain well and mash together with butter, garlic, rosemary, chives and lemon zest.
  2. Meanwhile, place cod fillets in a single layer in a large frying pan and cover with milk. Bring to boil then reduce heat and simmer for 4 minutes. Turn off heat and allow to cool slightly. Remove fish from pan, remove skin and gently flake flesh. Gently fold fish through potato mixture and season to taste.
  3. Form mixture into 8 even patties and refrigerate for 20 minutes. Place flour, eggs and crumbs in three separate small bowls. Remove patties from fridge and coat each in flour, then egg, then crumbs.
  4. Shallow fry patties in hot oil for 1-2 minutes on each side, or until golden; drain on absorbent paper. Serve immediately with salad and lemon wedges.
