To make this dish at home by prescription from the author Gomer would need: 500g potatoes, peeled, coarsely chopped, 50g butter, 2 cloves garlic, crushed, 2 tsp finely chopped fresh rosemary, 2 tbsp chopped fresh chives , Finely grated zest of 2 lemons, 500g smoked cod fillets, 3 cups milk , 1/4 cup wholemeal plain flour, 2 eggs, lightly beaten, 2 cups fresh wholemeal or whole grain Breadcrumbs, Vegetable oil for shallow frying, Salad and lemon wedges, to serve.
Ingredients:
- 500g potatoes, peeled, coarsely chopped
- 50g butter
- 2 cloves garlic, crushed
- 2 tsp finely chopped fresh rosemary
- 2 tbsp chopped fresh chives
- Finely grated zest of 2 lemons
- 500g smoked cod fillets
- 3 cups milk
- 1/4 cup wholemeal plain flour
- 2 eggs, lightly beaten
- 2 cups fresh wholemeal or whole grain Breadcrumbs
- Vegetable oil for shallow frying
- Salad and lemon wedges, to serve
Instructions
- Cook potatoes in large pan of boiling water until tender. Drain well and mash together with butter, garlic, rosemary, chives and lemon zest.
- Meanwhile, place cod fillets in a single layer in a large frying pan and cover with milk. Bring to boil then reduce heat and simmer for 4 minutes. Turn off heat and allow to cool slightly. Remove fish from pan, remove skin and gently flake flesh. Gently fold fish through potato mixture and season to taste.
- Form mixture into 8 even patties and refrigerate for 20 minutes. Place flour, eggs and crumbs in three separate small bowls. Remove patties from fridge and coat each in flour, then egg, then crumbs.
- Shallow fry patties in hot oil for 1-2 minutes on each side, or until golden; drain on absorbent paper. Serve immediately with salad and lemon wedges.
