To make this dish at home by prescription from the author Gomer would need: 4 potatoes, scrubbed, cut into thick wedges, 2 tbsp olive oil, 1 small leek, thinly sliced, 1 zucchini, halved, thinly sliced, 1/3 cup semi-dried tomatoes , 4 pink ling fillets, Lemon wedges, to serve .
Ingredients:
- 4 potatoes, scrubbed, cut into thick wedges
- 2 tbsp olive oil
- 1 small leek, thinly sliced
- 1 zucchini, halved, thinly sliced
- 1/3 cup semi-dried tomatoes
- 4 pink ling fillets
- Lemon wedges, to serve
Instructions
- Preheat oven to 200°C.
- Place potatoes in a large baking dish. Toss with oil. Season to taste. Bake for 20 mins. Sprinkle leek over potatoes. Bake for a further 5 mins, until tender.
- Stir zucchini and tomatoes through potato mixture. Place fish on top.
- Bake for a further 10-15 mins until fish flakes when tested with a fork. Serve with lemon wedges.
