Fish ball green curry

To make this dish at home by prescription from the author Gomer would need: 1kg redfish fillets, 1/4 cup Thai green curry paste, 1/4 cup vegetable oil, 1 brown onion, sliced, 1 carrot, sliced , 400ml can coconut cream, 375g green beans, trimmed, halved, 1 tbsp fish sauce , Steamed white rice, to serve.
Ingredients:
- 1kg redfish fillets
- 1/4 cup Thai green curry paste
- 1/4 cup vegetable oil
- 1 brown onion, sliced
- 1 carrot, sliced
- 400ml can coconut cream
- 375g green beans, trimmed, halved
- 1 tbsp fish sauce
- Steamed white rice, to serve
Instructions
- Place fish and 1 tablespoon curry paste in a food processor. Process until smooth. Roll tablespoons of mixture into balls.
- Heat 2 tablespoons of oil in a large frying pan over medium-high heat. Cook fish balls, in batches, for 6 minutes or until golden and cooked through. Drain on paper towel.
- Heat remaining oil in a large saucepan over medium-high heat. Add onion. Cook, stirring, for 3 minutes or until soft. Add remaining curry paste. Cook, stirring, for 1 to 2 minutes or until fragrant. Add carrot and coconut cream. Bring to the boil. Reduce heat to low. Simmer for 5 minutes. Add beans, fish sauce and fish balls. Simmer for 2 minutes or until beans are just tender and fish balls are heated through. Serve with rice.
