To make this dish at home by prescription from the author Gomer would need: 4 x 180g blue-eye fillets, skin removed, 30g unsalted butter, melted, 2 tbs Cajun spice mix, 1/3 cup olive oil, 800g kumara, cut into chips , 1 1/2 tsp caster sugar, Aioli, coriander leaves and lemon wedges, to serve .

Ingredients:

  • 4 x 180g blue-eye fillets, skin removed 
  • 30g unsalted butter, melted 
  • 2 tbs Cajun spice mix 
  • 1/3 cup olive oil 
  • 800g kumara, cut into chips 
  • 1 1/2 tsp caster sugar 
  • Aioli, coriander leaves and lemon wedges, to serve 

Instructions

  1. Brush fish with butter, season and dust with Cajun spice mix. Set aside for 30 minutes to marinate.
  2. Preheat the oven to 220C, drizzle chips with 1/4 cup (60ml) oil, sprinkle with sugar and season with salt. Place on a rack set above a baking tray and bake, turning halfway, for 25 minutes or until crisp.
  3. Meanwhile, heat remaining 1 tbs oil in a frypan over medium-high heat. Cook fish, turning, for 6-8 minutes until cooked. Serve fish with chips, aioli, coriander and lemon wedges on the side.
