Blackened fish with kumara chips

To make this dish at home by prescription from the author Gomer would need: 4 x 180g blue-eye fillets, skin removed, 30g unsalted butter, melted, 2 tbs Cajun spice mix, 1/3 cup olive oil, 800g kumara, cut into chips , 1 1/2 tsp caster sugar, Aioli, coriander leaves and lemon wedges, to serve .
Ingredients:
- 4 x 180g blue-eye fillets, skin removed
- 30g unsalted butter, melted
- 2 tbs Cajun spice mix
- 1/3 cup olive oil
- 800g kumara, cut into chips
- 1 1/2 tsp caster sugar
- Aioli, coriander leaves and lemon wedges, to serve
Instructions
- Brush fish with butter, season and dust with Cajun spice mix. Set aside for 30 minutes to marinate.
- Preheat the oven to 220C, drizzle chips with 1/4 cup (60ml) oil, sprinkle with sugar and season with salt. Place on a rack set above a baking tray and bake, turning halfway, for 25 minutes or until crisp.
- Meanwhile, heat remaining 1 tbs oil in a frypan over medium-high heat. Cook fish, turning, for 6-8 minutes until cooked. Serve fish with chips, aioli, coriander and lemon wedges on the side.
