Tapenade and passata infuse this baked fish with sensational flavour.

To make this dish at home by prescription from the author Gomer would need: Olive oil spray, 2 white fish fillets, 1/4 cup black olive tapenade, 1 1/2 cups passata, 1/3 cup fresh oregano leaves , 1 1/2 tbsp olive oil, 1 cup couscous .
Ingredients:
- Olive oil spray
- 2 white fish fillets
- 1/4 cup black olive tapenade
- 1 1/2 cups passata
- 1/3 cup fresh oregano leaves
- 1 1/2 tbsp olive oil
- 1 cup couscous
Instructions
- Preheat oven to 180C. Spray a baking dish with oil. Place the fish in the dish. Spread tapenade over the fish. Pour over passata and season with pepper. Top with half the oregano. Drizzle with 1 tablespoon oil. Bake for 20-25 minutes or until fish flakes when tested with a fork.
- Meanwhile, place couscous in a heatproof bowl. Rub remaining oil into the couscous. Pour over 1 cup boiling water. Cover with plastic wrap and set aside until the liquid is absorbed. Use a fork to separate.
- Divide the couscous among serving plates. Cut each fish fillet in half. Place fish on top of the couscous. Top with sauce and remaining oregano.
