Pork and mushroom stew

This hearty pork and mushroom stew recipe is great for a cosy winter dinner.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 brown onion, thinly sliced, 200g sliced mushrooms, 450g Coles Trim Pork Fillets, fat trimmed, thinly sliced, 1 tbsp smoked paprika , 1 tsp caraway seeds, 2 tbsp tomato paste, 1/3 cup Coles Brand Sour Cream , 1 tbsp chopped oregano, plus extra leaves to serve, Mashed potato, to serve.
Ingredients:
- 1 tbsp olive oil
- 1 brown onion, thinly sliced
- 200g sliced mushrooms
- 450g Coles Trim Pork Fillets, fat trimmed, thinly sliced
- 1 tbsp smoked paprika
- 1 tsp caraway seeds
- 2 tbsp tomato paste
- 1/3 cup Coles Brand Sour Cream
- 1 tbsp chopped oregano, plus extra leaves to serve
- Mashed potato, to serve
Instructions
- Heat the oil in a large frying pan over medium heat. Cook the onion, stirring, for 4 mins or until golden. Increase heat to high. Add the mushrooms, pork, paprika and caraway seeds. Cook, stirring, for 4-5 mins or until pork starts to brown. Stir in the tomato paste. Season.
- Stir in the sour cream and chopped oregano. Cook, stirring, for 1 min or until sauce begins to bubble.
- Divide mash among plates. Spoon over pork. Sprinkle with extra oregano.
