Pineapple and ginger braised pork

To make this dish at home by prescription from the author Gomer would need: 1 tbsp extra virgin olive oil, 1.8kg Coles Australian Pork Forequarter Roast Boneless, 2 brown onions, chopped, 15cm piece ginger, sliced, 2 cups pineapple juice , 1 tbsp American mustard, 3 tsp coriander seeds, 2 cups chicken stock , 1/4 cup flat-leaf parsley, chopped, 2 x 450g tubs Coles Brand Australian Creamy Potato Salad.
Ingredients:
- 1 tbsp extra virgin olive oil
- 1.8kg Coles Australian Pork Forequarter Roast Boneless
- 2 brown onions, chopped
- 15cm piece ginger, sliced
- 2 cups pineapple juice
- 1 tbsp American mustard
- 3 tsp coriander seeds
- 2 cups chicken stock
- 1/4 cup flat-leaf parsley, chopped
- 2 x 450g tubs Coles Brand Australian Creamy Potato Salad
Instructions
- Heat oil in a large deep saucepan over medium-high heat. Cook pork, turning, for 10 mins or until browned all over. Transfer to a heatproof bowl.
- Add onion and ginger to pan and cook, stirring, for 2 mins or until starting to brown. Add pineapple juice, mustard, coriander seeds and stock. Bring to a simmer. Return pork to pan. Reduce heat to low and simmer, covered, for 2 hours or until pork is very tender. Remove pork from pan.
- Sprinkle pork with parsley. Serve with potato salad.
