This fresh and vibrant Thai-style pork salad can be on the table in less than half an hour.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp peanut oil, 500g Coles Brand pork mince, 1 tsp crushed garlic, 1 tsp crushed ginger, 1 long red chilli, sliced , 1 lime, finely grated zest and juice, plus extra lime cheeks, to serve, 1/4 cup fish sauce, 1 tbsp soy sauce , 1 tsp white sugar, 250g Coles Brand microwave rice, 1 bunch fresh coriander, leaves picked, 1 bunch fresh mint, leaves picked, 2 tbsp peanuts, 2 baby cos lettuce, cut into wedges.

Ingredients:

  • 1 tbsp peanut oil 
  • 500g Coles Brand pork mince 
  • 1 tsp crushed garlic 
  • 1 tsp crushed ginger 
  • 1 long red chilli, sliced 
  • 1 lime, finely grated zest and juice, plus extra lime cheeks, to serve 
  • 1/4 cup fish sauce 
  • 1 tbsp soy sauce 
  • 1 tsp white sugar 
  • 250g Coles Brand microwave rice 
  • 1 bunch fresh coriander, leaves picked 
  • 1 bunch fresh mint, leaves picked 
  • 2 tbsp peanuts 
  • 2 baby cos lettuce, cut into wedges 

Instructions

  1. Heat oil in a large frying pan or wok. Cook mince, stirring to break up any lumps, for 5 mins, until brown. Add garlic, ginger, chilli, lime zest, juice, fish sauce, soy sauce and sugar to pork. Cook for 1-2 mins, until fragrant. Add rice and stir to combine. Cook for 1-2 mins, until heated through.
  2. Remove from heat. Stir through most of the coriander and mint. Spoon pork mixture into serving bowls. Top with peanuts and remaining coriander and mint. Serve with cos lettuce and lime cheeks.
