Moroccan pork with couscous salad

The fresh flavours of mint, coriander and tomato in the couscous salad are the perfect compliment to the Moroccan-seasoned pork.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp Coles Brand Pure Olive Oil, 4 Coles Australian Pork Sirloin Steaks, 1 tbsp Moroccan seasoning, 1 1/2 cups Coles Brand Couscous, 1 1/2 cups boiling water , 200g green beans, trimmed, chopped, 200g punnet Perino tomatoes, halved, 1/2 cup mint leaves, chopped , 1/2 cup coriander, chopped, plus extra sprigs to serve, 1/4 cup Coles Brand French Dressing.
Ingredients:
- 1 tbsp Coles Brand Pure Olive Oil
- 4 Coles Australian Pork Sirloin Steaks
- 1 tbsp Moroccan seasoning
- 1 1/2 cups Coles Brand Couscous
- 1 1/2 cups boiling water
- 200g green beans, trimmed, chopped
- 200g punnet Perino tomatoes, halved
- 1/2 cup mint leaves, chopped
- 1/2 cup coriander, chopped, plus extra sprigs to serve
- 1/4 cup Coles Brand French Dressing
Instructions
- Heat a barbecue grill or chargrill on medium-high. Rub oil over pork and sprinkle with Moroccan seasoning. Cook on grill for 3-4 mins each side or until just cooked through.
- Meanwhile, place the couscous in a heatproof bowl and pour over 1 1/2 cups boiling water. Cover and set aside for 5 mins or until all the liquid is absorbed. Use a fork to separate grains. Cook the beans in a small saucepan of boiling water for 2-3 mins or until just tender. Drain.
- Add beans, tomatoes, mint, coriander and dressing to the couscous. Toss to combine. Season. Serve with pork and extra coriander.
