To make this dish at home by prescription from the author Gomer would need: 4 pork loin cutlets, 1 tbsp grated fresh ginger, 1 tbsp Fountain soy sauce, 1 tbsp chopped coriander, 450g Wokka shelf life hokkien noodles , 1 tbsp peanut oil, 1 red onion, thin wedges, 1 red capsicum, sliced , 120g snow peas, halved diagonally, 110ml Neil Perry Fresh soy and chilli dressing, 100g pkt baby Asian greens.
Ingredients:
- 4 pork loin cutlets
- 1 tbsp grated fresh ginger
- 1 tbsp Fountain soy sauce
- 1 tbsp chopped coriander
- 450g Wokka shelf life hokkien noodles
- 1 tbsp peanut oil
- 1 red onion, thin wedges
- 1 red capsicum, sliced
- 120g snow peas, halved diagonally
- 110ml Neil Perry Fresh soy and chilli dressing
- 100g pkt baby Asian greens
Instructions
- Place the pork in a shallow ceramic dish. Combine the ginger, soy and coriander. Pour over the pork and turn to coat. Refrigerate for 1-2 hours to marinate.
- Cook the noodles in boiling water for 1-2 minutes or until tender. Drain. Preheat a chargrill pan or barbeque grill over a high heat. Reduce heat to medium. Grease the cutlets and cook for 3 minutes each side or until cooked through.
- Meanwhile, heat a wok over a high heat. Add the oil and swirl to coat. Add the onion and capsicum and stir-fry for 2 minutes. Add the snow peas and stir-fry for 1 minute.
- Add the noodles and dressing, toss. Remove from the heat and gently toss through the Asian greens. Divide among plates and top with the pork to serve.
