Ginger coriander pork with noodles

To make this dish at home by prescription from the author Gomer would need: 4 pork loin cutlets, 1 tbsp grated fresh ginger, 1 tbsp Fountain soy sauce, 1 tbsp chopped coriander, 450g Wokka shelf life hokkien noodles , 1 tbsp peanut oil, 1 red onion, thin wedges, 1 red capsicum, sliced , 120g snow peas, halved diagonally, 110ml Neil Perry Fresh soy and chilli dressing, 100g pkt baby Asian greens.

Ingredients:

  • 4 pork loin cutlets 
  • 1 tbsp grated fresh ginger 
  • 1 tbsp Fountain soy sauce 
  • 1 tbsp chopped coriander 
  • 450g Wokka shelf life hokkien noodles 
  • 1 tbsp peanut oil 
  • 1 red onion, thin wedges 
  • 1 red capsicum, sliced 
  • 120g snow peas, halved diagonally 
  • 110ml Neil Perry Fresh soy and chilli dressing 
  • 100g pkt baby Asian greens 

Instructions

  1. Place the pork in a shallow ceramic dish. Combine the ginger, soy and coriander. Pour over the pork and turn to coat. Refrigerate for 1-2 hours to marinate.
  2. Cook the noodles in boiling water for 1-2 minutes or until tender. Drain. Preheat a chargrill pan or barbeque grill over a high heat. Reduce heat to medium. Grease the cutlets and cook for 3 minutes each side or until cooked through.
  3. Meanwhile, heat a wok over a high heat. Add the oil and swirl to coat. Add the onion and capsicum and stir-fry for 2 minutes. Add the snow peas and stir-fry for 1 minute.
  4. Add the noodles and dressing, toss. Remove from the heat and gently toss through the Asian greens. Divide among plates and top with the pork to serve.
