Pork with balsamic apples

To make this dish at home by prescription from the author Gomer would need: 2 tbsp olive oil, 1 red onion, halved, cut into thin wedges, 2 tbsp brown sugar, 1 tbsp white balsamic vinegar, 3 granny smith apples, peeled, quartered, cored, cut into thin wedges , 1/4 cup sultanas, 30g baby cos lettuce leaves, 2 tbsp whole-egg mayonnaise , 2 tbsp Tamar Valley Greek Style Yoghurt, 1/4 cup plain flour, 1 egg, lightly beaten, 1 cup dried multigrain breadcrumbs, 4 pork leg steaks, Salad leaves, to serve.

Ingredients:

  • 2 tbsp olive oil 
  • 1 red onion, halved, cut into thin wedges 
  • 2 tbsp brown sugar 
  • 1 tbsp white balsamic vinegar 
  • 3 granny smith apples, peeled, quartered, cored, cut into thin wedges 
  • 1/4 cup sultanas 
  • 30g baby cos lettuce leaves 
  • 2 tbsp whole-egg mayonnaise 
  • 2 tbsp Tamar Valley Greek Style Yoghurt 
  • 1/4 cup plain flour 
  • 1 egg, lightly beaten 
  • 1 cup dried multigrain breadcrumbs 
  • 4 pork leg steaks 
  • Salad leaves, to serve 

Instructions

  1. Heat half the oil in a nonstick saucepan over medium heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add sugar, vinegar, 1 tablespoon cold water and two-thirds of the apple. Season with salt and pepper. Stir to combine. Cover. Bring to a simmer. Reduce heat to medium-low. Cook, stirring, for 10 to 12 minutes or until apple is tender. Remove from heat. Cover to keep warm.
  2. Place flour on a plate. Season with salt and pepper. Place egg in a bowl. Place breadcrumbs on a plate.
  3. Toss half the steaks in flour mixture. Transfer to a plate. Cut remaining steaks into thick strips. Toss strips in flour mixture. Dip in egg, shaking off excess. Toss in breadcrumbs. Transfer to a plate. Heat remaining oil in a non-stick frying pan over medium heat. Cook whole steaks for 2 to 3 minutes each side or until browned and cooked through. Transfer to a plate. Cover to keep warm. Add steak strips to pan. Cook for 1 to 2 minutes each side or until browned and cooked through. Transfer to a plate lined with paper towel.
  4. Season whole steaks with salt and pepper. Serve with balsamic apples and salad leaves.
