Caramelised pork chops with apple

To make this dish at home by prescription from the author Gomer would need: 4 pork loin chops, 2 tbsp brown sugar, 2 tbsp olive oil, 3 golden delicious apples, cored, cut into thin wedges, 250g truss cherry tomatoes, cut into 4 bunches , 100g baby salad leaves, 1/4 cup olive oil, 1 tbsp balsamic vinegar , 2 tsp wholegrain mustard.

Ingredients:

  • 4 pork loin chops 
  • 2 tbsp brown sugar 
  • 2 tbsp olive oil 
  • 3 golden delicious apples, cored, cut into thin wedges 
  • 250g truss cherry tomatoes, cut into 4 bunches 
  • 100g baby salad leaves 
  • 1/4 cup olive oil 
  • 1 tbsp balsamic vinegar 
  • 2 tsp wholegrain mustard 

Instructions

  1. Place pork in a glass or ceramic dish. Rub both sides of pork with sugar. Heat oil in a large, non-stick frying pan over medium-high heat. Cook pork for 1 minute each side or until golden and caramelised. Reduce heat to medium. Cook for 2 to 3 minutes each side or until cooked through. Transfer pork to a plate. Cover. Set aside for 5 minutes to rest.
  2. Meanwhile, add apple and tomatoes to pan. Cook, turning apples, for 5 minutes or until tender.
  3. Make balsamic dressing: Place oil, balsamic vinegar and mustard in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
  4. Place salad leaves in a bowl. Drizzle with balsamic dressing. Toss to combine. Place pork on plates. Top with apple, tomatoes and salad leaves. Serve.
