Ingredients:

  • olive oil cooking spray 
  • 4 pork cutlets, trimmed 
  • 2 tsp Tuscan seasoning 
  • 60g baby spinach 
  • 3 small tomatoes, cut into wedges 
  • 100g feta, chopped 
  • 1/3 cup kalamata olives 
  • 3 tsp balsamic vinegar 
  • 1 tsp olive oil 

Instructions

  1. Spray a barbecue plate or chargrill with oil. Heat over medium-high heat. Spray both sides pork with oil. Sprinkle with seasoning. Cook pork for 4 minutes each side for medium or until cooked to your liking.
