To make this dish at home by prescription from the author Gomer would need: 1 small white onion, coarsely chopped, 1 clove garlic, halved, 2 small red chillies, halved, seeded, 1/4 cup chopped fresh lemongrass, 1/4 cup chopped fresh coriander , 1 tbsp peanut oil, 1kg diced pork, 1 tbsp garam masala , 1 tbsp ground cumin, 1/2 cup water, 2 x 140ml can coconut cream.

Ingredients:

  • 1 small white onion, coarsely chopped 
  • 1 clove garlic, halved 
  • 2 small red chillies, halved, seeded 
  • 1/4 cup chopped fresh lemongrass 
  • 1/4 cup chopped fresh coriander 
  • 1 tbsp peanut oil 
  • 1kg diced pork 
  • 1 tbsp garam masala 
  • 1 tbsp ground cumin 
  • 1/2 cup water 
  • 2 x 140ml can coconut cream 

Instructions

  1. Process or blend onion, garlic, chilli, lemongrass and coriander until finely chopped.
  2. Heat oil in wok. Cook pork in 3 batches until browned all over.
  3. Add onion mixture, garam masala and cumin, cook, stirring for 2 minutes until fragrant. Return pork to wok with water and coconut cream, bring to a boil.
  4. Reduce heat to simmer, cook covered for 5 minutes or until sauce has thickened. Serve with rice and garlic & coriander naan bread.
