To make this dish at home by prescription from the author Gomer would need: 450g pkt Fantastic Fresh Hokkein Noodles, 1 tbsp vegetable oil, 500g Coles Australian Pork Extra Trim Fillets, thinly sliced, 1 red onion, cut into thin wedges, 1 garlic clove, sliced , 2cm piece ginger, cut into matchsticks, 3 small black plums, stoned, cut into wedges, 2 tsp brown sugar , 1/2 red chilli, thinly sliced, 1 bunch broccolini, halved horizontally, 1/4 cup sweet chilli sauce, Spring onions, thinly sliced, to serve.
Ingredients:
- 450g pkt Fantastic Fresh Hokkein Noodles
- 1 tbsp vegetable oil
- 500g Coles Australian Pork Extra Trim Fillets, thinly sliced
- 1 red onion, cut into thin wedges
- 1 garlic clove, sliced
- 2cm piece ginger, cut into matchsticks
- 3 small black plums, stoned, cut into wedges
- 2 tsp brown sugar
- 1/2 red chilli, thinly sliced
- 1 bunch broccolini, halved horizontally
- 1/4 cup sweet chilli sauce
- Spring onions, thinly sliced, to serve
Instructions
- Prepare the noodles following packet directions. Drain. Set aside.
- Meanwhile, heat half the oil in a wok over medium-high heat. Cook the pork, in batches, for 2 mins or until lightly browned. Transfer to a plate.
- Heat the remaining oil over medium-high heat. Add the onion and stir-fry for 2 mins or until slightly caramelised. Add garlic and ginger and stir-fry for 1 min or until fragrant. Add plums, sugar and chilli and stir-fry for 2-3 mins or until plums are slightly caramelised. Return pork to the wok along with broccolini, sweet chilli sauce and ¼ cup (60ml) water. Stir-fry for 2-3 mins or until pork is cooked through. Add the noodles and gently toss to combine. Divide stir-fry among serving bowls. Top with spring onions to serve.
