To make this dish at home by prescription from the author Gomer would need: 1/3 cup Coles Brand Tomato Sauce, 1/3 cup barbecue sauce, 1/3 cup bourbon, 1/3 cup brown sugar, 1 1/2 tsp smoked paprika , 2 garlic cloves, crushed, 1.5kg Coles Australian BBQ Pork Ribs, 800g red washed potatoes, cut into wedges , 2 tbsp rice bran oil, 2 corn cobs, each cut into 3 pieces, Lime wedges, to serve.

Ingredients:

  • 1/3 cup Coles Brand Tomato Sauce 
  • 1/3 cup barbecue sauce 
  • 1/3 cup bourbon 
  • 1/3 cup brown sugar 
  • 1 1/2 tsp smoked paprika 
  • 2 garlic cloves, crushed 
  • 1.5kg Coles Australian BBQ Pork Ribs 
  • 800g red washed potatoes, cut into wedges 
  • 2 tbsp rice bran oil 
  • 2 corn cobs, each cut into 3 pieces 
  • Lime wedges, to serve 

Instructions

  1. Combine the tomato sauce, barbecue sauce, bourbon, sugar, paprika and garlic in a glass or ceramic dish. Add ribs and turn to coat. Cover and marinate in the fridge for 4 hrs or overnight. Remove ribs from the fridge 1 hr before baking.
  2. Preheat oven to 180C or 160C fan.
  3. Place potato on a large oven tray. Drizzle with oil and season. Toss to coat and arrange in a single layer. Bake for 1 1/4 hrs or until tender and golden.
  4. Meanwhile, arrange the ribs in a single layer in a large baking dish. Pour over marinade, reserving 1/2 cup. Cover with foil and bake with the potatoes for 1 hr. Discard foil. Drizzle with reserved marinade and turn to coat. Increase oven to 200˚C or 180˚C fan. Bake for 10-15 mins or until caramelised.
  5. Boil, microwave or steam corn for 3-5 mins or until tender. Serve ribs with potato wedges, corn and lime wedges.
