To make this dish at home by prescription from the author Gomer would need: 1.5kg piece pork neck, 1 tbsp grapeseed oil, 1 medium red onion, finely chopped, 3 garlic cloves, thinly sliced, 1 tbsp ground cumin , 2 tsp ground coriander, 2 tsp smoked paprika, 1/2 tsp dried chilli flakes , 1 tsp dried oregano, 400g can crushed tomatoes, 2 tsp caster sugar, Light sour cream, to serve, 400g can kidney beans, drained, rinsed, 310g can corn kernels, drained, 1 large avocado, diced, 1 large red capsicum, diced.

Ingredients:

  • 1.5kg piece pork neck 
  • 1 tbsp grapeseed oil 
  • 1 medium red onion, finely chopped 
  • 3 garlic cloves, thinly sliced 
  • 1 tbsp ground cumin 
  • 2 tsp ground coriander 
  • 2 tsp smoked paprika 
  • 1/2 tsp dried chilli flakes 
  • 1 tsp dried oregano 
  • 400g can crushed tomatoes 
  • 2 tsp caster sugar 
  • Light sour cream, to serve 
  • 400g can kidney beans, drained, rinsed 
  • 310g can corn kernels, drained 
  • 1 large avocado, diced 
  • 1 large red capsicum, diced 
  • 1/4 cup chopped fresh coriander leaves 
  • 2 tbsp lime juice 

Instructions

  1. Rub pork all over with 2 teaspoons oil. Season with salt and pepper. Heat a large, heavy-based saucepan over medium-high heat. Cook pork, turning, for 8 to 10 minutes or until browned. Transfer to a plate.
  2. Add remaining oil to pan. Add onion. Cook, stirring, for 3 to 4 minutes or until softened. Add garlic, cumin, coriander, paprika, chilli flakes and oregano. Cook, stirring, for 1 minute or until fragrant. Add tomato, sugar and ½ cup cold water. Stir to combine. Bring to the boil. Reduce heat to low. Return pork to pan. Simmer, covered, for 1 hour and 30 minutes, basting with sauce every 30 minutes.
  3. Turn pork. Cover. Cook for 1 hour and 30 minutes, basting every 30 minutes, or until pork is tender. Transfer pork to a plate. Cover with foil. Simmer sauce, stirring occasionally, for 8 to 10 minutes or until thickened. Season with salt and pepper.
  4. Meanwhile, make salad Place beans, corn, avocado, capsicum, coriander and lime juice in a large bowl. Season with salt and pepper. Toss to combine.
  5. Thickly slice pork. Serve with sauce, sour cream and salad.
