Pork stir-fry with vegetables

Fire up this wok for this speedy stir-fry which cooks in just under half an hour.

To make this dish at home by prescription from the author Gomer would need: 1/4 cup Massel vegetable liquid stock, 2 tsp Maggi hoisin sauce, 2 tsp Kikkoman reduced-salt soy sauce, 1 tbsp olive oil, 1 tbsp Gourmet Garden ginger spice blend , 300g pork fillet, thinly sliced, 1 brown onion, halved, cut into wedges, 2 red capsicums, deseeded, cut into strips , 150g snow peas, halved lengthways, 1 bunch broccolini, chopped, 4 cups steamed Basmati rice, to serve.
Ingredients:
- 1/4 cup Massel vegetable liquid stock
- 2 tsp Maggi hoisin sauce
- 2 tsp Kikkoman reduced-salt soy sauce
- 1 tbsp olive oil
- 1 tbsp Gourmet Garden ginger spice blend
- 300g pork fillet, thinly sliced
- 1 brown onion, halved, cut into wedges
- 2 red capsicums, deseeded, cut into strips
- 150g snow peas, halved lengthways
- 1 bunch broccolini, chopped
- 4 cups steamed Basmati rice, to serve
Instructions
- Combine the stock, hoisin and soy sauce in a bowl. Set aside.
- Heat a large wok on a high heat. Add 2 teaspoons of the oil with the ginger blend and stir-fry half the pork for 2 minutes. Remove and set aside. Repeat with remaining pork.
- Add remaining olive oil and stir-fry the onion for 2 minutes. Add the capsicum, snow peas and broccolini and stir-fry for 2 minutes. Return pork with stock mixture. Stir-fry for 2 minutes or until heated through.
- Serve the stir-fry with the steamed rice.
