To make this dish at home by prescription from the author Gomer would need: 2 tsp sea salt, 1 tsp ground cumin, 1 1/2 tsp ground fennel, 1.5kg loin pork, rind on, olive oil spray , 1.5kg granny smith apples, peeled, cored and sliced, 1 tbsp white sugar, 2/3 cup water .

Ingredients:

  • 2 tsp sea salt 
  • 1 tsp ground cumin 
  • 1 1/2 tsp ground fennel 
  • 1.5kg loin pork, rind on 
  • olive oil spray 
  • 1.5kg granny smith apples, peeled, cored and sliced 
  • 1 tbsp white sugar 
  • 2/3 cup water 

Instructions

  1. Preheat oven to 220°C. Combine sea salt, cumin, and fennel in a small bowl.
  2. Slash pork rind with a sharp knife and spray with olive oil. Rub on spice mixture.
  3. Place pork into a greased roasting pan and roast for 20 minutes. Reduce heat to 180°C.
  4. Add apples to pan, sprinkle with sugar, and pour over water. Roast for a further 1 hour and 15 minutes, stirring apples occasionally.
  5. Remove pork from oven and cover loosely with foil. Rest for 15 minutes before carving. Serve with apples.
