Pork with crushed potatoes

To make this dish at home by prescription from the author Gomer would need: 700g Desiree potatoes, chopped, 1 tbsp olive oil, 8 extra-trim pork loin steaks, 2 garlic cloves, crushed, 1 tbsp wholegrain mustard , 1/2 cup Massel salt reduced chicken style liquid stock, 100g baby spinach .

Ingredients:

  • 700g Desiree potatoes, chopped 
  • 1 tbsp olive oil 
  • 8 extra-trim pork loin steaks 
  • 2 garlic cloves, crushed 
  • 1 tbsp wholegrain mustard 
  • 1/2 cup Massel salt reduced chicken style liquid stock 
  • 100g baby spinach 

Instructions

  1. Place potatoes into a saucepan. Cover with cold water. Add a pinch of salt. Bring to the boil over high heat. Reduce heat to medium. Cook for 12 to 15 minutes or until tender. Drain. Set aside.
  2. Heat oil in a non-stick frying pan over medium-high heat. Season both sides of pork with salt and pepper. Cook for 2 minutes each side or until cooked to your liking. Transfer to a plate. Cover to keep warm.
  3. Add potatoes, garlic and mustard to hot frying pan. Mash lightly with a potato masher so potatoes are just crushed. Add stock and spinach. Toss until spinach has just wilted. Serve pork with crushed potatoes.
