Ingredients:

  • 175g butter, chopped, at room temperature 
  • 175g dark chocolate, chopped 
  • 1 cup brown sugar 
  • 3 eggs, lightly beaten 
  • 1 orange rind, finely grated 
  • 1 cup self-raising flour 
  • 2 tablespoon cocoa 
  • 6 slices orange, halved 

Instructions

  1. Preheat oven to 180C or 160C fan. Line a 12-hole, 1/3-cup muffin pan with paper cases.
  2. Melt butter and chocolate in a heat-proof bowl over a saucepan of simmering water, stirring until smooth. Add sugar and stir until dissolved. Remove from heat.
  3. Add eggs and rind and beat with a wooden spoon until well-combined.
  4. Sift flour and cocoa and fold into mixture, until just combined. Fill prepared pans and top each with a slice of orange. Bake for 20-25 mins, until a skewer inserted comes out clean. Cool on a wire rack.
