To make this dish at home by prescription from the author sheff would need: 1 1/2 cups self-raising flour, 1/2 cup raw sugar, 1/2 cup dark chocolate chips, 3 very ripe bananas, mashed, 2 Coles Brand Australian Free Range Eggs, lightly beaten , 1 teaspoon vanilla essence, 1/2 cup vegetable oil, 125g cream cheese , 1/4 cup icing sugar mixture, 6 Coles Brand Banana Chips.

Ingredients:

  • 1 1/2 cups self-raising flour 
  • 1/2 cup raw sugar 
  • 1/2 cup dark chocolate chips 
  • 3 very ripe bananas, mashed 
  • 2 Coles Brand Australian Free Range Eggs, lightly beaten 
  • 1 teaspoon vanilla essence 
  • 1/2 cup vegetable oil 
  • 125g cream cheese 
  • 1/4 cup icing sugar mixture 
  • 6 Coles Brand Banana Chips 

Instructions

  1. Preheat oven to 200C. Line 6 holes of a 12-hole, 1/3 cup (80ml) capacity muffin tin with paper cases.
  2. Combine the flour, sugar and chocolate chips in a bowl. Combine the banana, egg, vanilla and oil in a separate bowl.
  3. Add the wet ingredients to the dry ingredients. Gently stir with a wooden spoon until just combined. Spoon evenly among the paper cases. Bake for 20 mins or until muffins are golden and tops spring back when lightly touched. Turn onto a wire rack to cool completely.
  4. Use an electric mixer to beat the cream cheese and icing sugar until light and fluffy. Place a dollop of cream cheese icing on top of each muffin. Top with a banana chip.
