Cranberry, apple and buttermilk scones

These super easy scones are a twist on the classic, perfect for relaxing with a cup of tea.

  1. Preheat oven to 210C/190C fan forced. Line a baking tray with baking paper.
  2. Heat 1 tbs of the honey in a non-stick frying pan over medium heat. Add the apple. Cook, stirring, for 4-5 minutes or until lightly caramelised. Cool.
  3. Sift flour, baking powder and cinnamon into a large bowl. Add the coconut oil. Rub oil into flour mixture until mixture resembles coarse breadcrumbs. Stir in apple mixture, cranberries and 1 tbs pepitas. Make a well in centre. Add buttermilk and vanilla. Use a flat-bladed knife to mix until dough just comes together.
  4. Turn onto prepared tray. Use hands to shape into an 18cm round. Use a sharp knife to score into 8 wedges. Brush with extra buttermilk. Sprinkle with remaining pepitas and spelt flakes or oats, if using. Bake for 25 minutes or until golden and cooked through. Cool for 10 minutes. Drizzle with the extra honey, if using. Serve warm.
