To make this dish at home by prescription from the author WomanWorld would need: 8 oz. spaghetti, 1 tsp. oil, 2 c. cherry tomatoes, 1 tsp. minced fresh garlic, 1/2 tsp. dried oregano , 1 can tuna in water drained, 1 tbsp. drained capers, Freshly ground pepper and shaved Parmesan optional .
Ingredients:
- 8 oz. spaghetti
- 1 tsp. oil
- 2 c. cherry tomatoes
- 1 tsp. minced fresh garlic
- 1/2 tsp. dried oregano
- 1 can tuna in water drained
- 1 tbsp. drained capers
- Freshly ground pepper and shaved Parmesan optional
Instructions
- Cook pasta in boiling salted water according to package directions; drain, reserving 1/2 cup cooking water. Return pasta to pot.
- Meanwhile, coat large nonstick skillet with cooking spray; add oil. Heat over medium heat; add tomatoes. Cook, stirring occasionally, until tomatoes start to soften, about 5 min. Add garlic and oregano; cook, stirring, 1 min. Stir in tuna and capers.
- Stir tuna mixture into reserved pasta, adding a little of reserved pasta water if necessary to thin sauce. If necessary, re-heat over low heat. If desired, serve sprinkled with pepper and cheese.
