This is a Native American Recipe taught to my great grandparents. Sassafras tea tastes like weak flavored root beer. Harvest, wash and dry out the roots of the red sassafras. This should be done in the spring before the sap starts to rise. Store once it is very dry You can purchase dried sassafrass root at Food Co Ops and Natural Food Stores. It will resemble wood chips.
- Put the red sassafras root pieces into a sauce pan and add water. Bring to a boil for about 5 minutes (longer or shorter boiling time depending how strong you like it)
- Pour into two cups through a strainer. Add honey to sweeten if desired.
- This can be served hot or cold and tastes like a mild root beer.
