These vegetarian pesto bites make clever party pieces for even the most demanding crowd.

To make this dish at home by prescription from the author Gomer would need: 150g tub red pepper with cashew and parmesan dip, 1/2 cup fresh ricotta, 1 tbsp finely chopped fresh flat-leaf parsley leaves, 6 sheets filo pastry, Olive oil cooking spray , 2 tbsp fresh breadcrumbs, 1 tbsp finely grated parmesan .
Ingredients:
- 150g tub red pepper with cashew and parmesan dip
- 1/2 cup fresh ricotta
- 1 tbsp finely chopped fresh flat-leaf parsley leaves
- 6 sheets filo pastry
- Olive oil cooking spray
- 2 tbsp fresh breadcrumbs
- 1 tbsp finely grated parmesan
Instructions
- Place dip, ricotta and parsley in a bowl. Stir until well combined.
- Preheat oven to 180?C/160?C fan-forced. Line 1 large baking tray with baking paper. Place 1 sheet filo on a flat surface. Spray with oil. Top with 1 sheet filo. Repeat layering with 4 sheets filo. Leaving a 1cm border on 1 long side, spread ricotta mixture over filo. Sprinkle with breadcrumbs. Starting at opposite side to border, roll up like a Swiss roll. Trim ends. Cut into 20 even slices. Place on prepared tray.
- Spray rounds with oil. Top with parmesan and season with pepper. Bake for 15 minutes or until golden. Serve.
