Ingredients:

  • 280g jar Coles Brand Mixed Chargrilled Vegetables, drained, finely chopped, reserve 2 tbsp of the marinade 
  • 1 tbsp Coles Brand Basil Pesto 
  • 1 tbsp white Italian dressing 
  • 20g baby rocket, plus extra to serve 
  • 4 baked potatoes, to serve 

Instructions

  1. Drain jar of Coles Brand Mixed Chargrilled Vegetables, reserving 2 tablespoons of the marinade, and finely chop. Combine reserved marinade, Coles Brand Basil Pesto and white Italian dressing in a bowl.
  2. Top baked potatoes with the vegetables and baby rocket leaves. Spoon over the pesto dressing and season. Serve with extra rocket.
