Creamy penne with spinach

This quick and easy vegetarian pasta dish has roasted hazelnuts for added crunch and flavour.

Ingredients:

  • 400g penne pasta 
  • 2/3 cup spreadable cream cheese 
  • 1 large lemon, rind finely grated 
  • 1/4 tsp ground nutmeg 
  • 100g baby English spinach, trimmed 
  • 1/2 cup roasted hazelnuts, chopped 

Instructions

  1. Cook penne following packet directions. Drain and return to saucepan.
  2. Add cream cheese, lemon rind and nutmeg to hot pasta. Stir through until cheese has melted and coats pasta.
  3. Add spinach, nuts and salt and pepper. Toss to combine. Serve immediately.
