Spaghetti with garlic breadcrumbs

This simple vegetarian pasta is given a crunchy topping with the garlic breadcrumbs.

To make this dish at home by prescription from the author Gomer would need: 500g dried spaghetti pasta, 1/3 cup olive oil, 2 garlic cloves, crushed, 1 1/2 cups fresh breadcrumbs, 1/2 cup chopped fresh basil leaves , 1/2 cup basil pesto, 1 tsp dried chilli flakes, baby basil leaves and shaved parmesan, to serve .

Ingredients:

  • 500g dried spaghetti pasta 
  • 1/3 cup olive oil 
  • 2 garlic cloves, crushed 
  • 1 1/2 cups fresh breadcrumbs 
  • 1/2 cup chopped fresh basil leaves 
  • 1/2 cup basil pesto 
  • 1 tsp dried chilli flakes 
  • baby basil leaves and shaved parmesan, to serve 

Instructions

  1. Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Return to pan.
  2. Meanwhile, heat oil in a large frying pan over medium-high heat. Add garlic. Cook, stirring, until fragrant. Add breadcrumbs. Cook, stirring, for 2 to 3 minutes or until golden. Remove from heat.
  3. Add half the breadcrumb mixture, basil, pesto and chilli to pasta. Season with salt and pepper. Toss to combine. Serve pasta topped with remaining breadcrumb mixture, baby basil leaves and parmesan.
