Watercress and chive couscous

To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups couscous, 1 1/2 cups boiling water, 1 cup trimmed watercress, finely chopped, 1/4 cup fresh chives, finely chopped, 1 garlic clove, crushed , 1 tbsp wholegrain mustard, 1 tbsp apple cider vinegar, 1/4 cup olive oil .

Ingredients:

  • 1 1/2 cups couscous 
  • 1 1/2 cups boiling water 
  • 1 cup trimmed watercress, finely chopped 
  • 1/4 cup fresh chives, finely chopped 
  • 1 garlic clove, crushed 
  • 1 tbsp wholegrain mustard 
  • 1 tbsp apple cider vinegar 
  • 1/4 cup olive oil 

Instructions

  1. Place couscous in a heatproof bowl. Add boiling water. Stand, covered, for 5 minutes or until water is absorbed. Stir with a fork to separate grains. Cool for 5 minutes.
  2. Meanwhile, place watercress, chives, garlic, mustard, vinegar and oil in a bowl. Stir to combine. Add to couscous. Season with salt and pepper. Stir to combine. Serve.
