Potato & goats cheese frittata

To make this dish at home by prescription from the author Gomer would need: 5 baby chat potatoes, thinly sliced, olive oil, 1 small red onion, chopped, 1 garlic clove, crushed, 8 eggs , 2 tbsp milk, 1 tbsp oregano, chopped, 75g goat's cheese, roughly crumbled , salt and cracked black pepper.

Ingredients:

  • 5 baby chat potatoes, thinly sliced 
  • olive oil 
  • 1 small red onion, chopped 
  • 1 garlic clove, crushed 
  • 8 eggs 
  • 2 tbsp milk 
  • 1 tbsp oregano, chopped 
  • 75g goat's cheese, roughly crumbled 
  • salt and cracked black pepper 

Instructions

  1. Heat an oven grill to hot. Heat 1 tablespoon olive oil in a large non-stick frying pan over medium-low heat. Add potato and onion. Cook for 5 minutes or until potato and onion start to soften. Add garlic and cook for a further minute.
  2. Whisk eggs with milk, oregano, salt and cracked black pepper in a medium bowl. Pour into pan. Reduce heat to very low and cook frittata for 8-10 minutes or until half set.
  3. Sprinkle over goat's cheese and cook for 5 minutes. Remove from stovetop and place under the grill for 3-4 minutes or until surface is fully set and golden. Serve frittata with a simple salad.
