Ingredients:
- 175g self-raising flour
- 125g instant polenta
- 100g almond meal
- 1 lemon, rind grated
- 175g unsalted butter
- 100g caster sugar
- 250g jam
- 100g flaked almonds
- 1 egg
- Icing sugar, to dust
Instructions
- Preheat oven to 180°C. Grease a 20 x 30cm lamington tray.
- Sift the flour and a pinch of salt into a large bowl. Add the polenta, almond meal and grated rind.
- Carefully melt the butter and sugar in a saucepan, then pour over the dry ingredients and stir until well combined. Press two thirds of the mixture into the prepared tray, then spread the jam over in an even layer.
- Place the remaining mixture in a food processor and add the flaked almonds and egg. Pulse for a few seconds until just combined. Sprinkle over the top of the jam and bake in the oven for 30-40 minutes until golden brown. Cut into bars while warm. Dust with icing sugar to serve.
