Cauliflower and blue cheese macaroni

Try a twist on an old favourite with this tasty cauliflower and blue cheese macaroni.

To make this dish at home by prescription from the author Gomer would need: 400g macaroni, 800g cauliflower, cut into small florets, 100g soft blue cheese, chopped, 250g Coles Simply Less Sour Cream, 20g pkt chives, chopped , 1 1/2 cups Coles Brand Australian Shredded Mozzarella, 1/3 cup panko breadcrumbs, 1 tbsp olive oil .
Ingredients:
- 400g macaroni
- 800g cauliflower, cut into small florets
- 100g soft blue cheese, chopped
- 250g Coles Simply Less Sour Cream
- 20g pkt chives, chopped
- 1 1/2 cups Coles Brand Australian Shredded Mozzarella
- 1/3 cup panko breadcrumbs
- 1 tbsp olive oil
Instructions
- Cook the macaroni in a large saucepan of boiling salted water following packet directions, adding the cauliflower in the last 5 mins of cooking. Drain, reserving 1/2 cup of the cooking liquid.
- Return the macaroni and cauliflower to the pan. Add the blue cheese, sour cream, chives, 3/4 cup of the mozzarella and the reserved cooking liquid. Toss to combine. Season. Transfer to a 6-cup heatproof dish.
- Preheat grill on high. Combine the breadcrumbs and remaining mozzarella in a bowl. Scatter over macaroni mixture. Drizzle with olive oil. Cook under grill for 2-3 mins or until golden and bubbling.
