  • 2 tbsp olive oil 
  • 2 cloves garlic, crushed 
  • 500g cup mushrooms, quartered 
  • 300ml thickened cream 
  • 1 tbsp fresh chives, snipped 
  • Asparagus, steamed, to serve 
  • Bread, thick slices, toasted, to serve 

Instructions

  1. Heat butter and oil together in a large frying pan on high. Add garlic and cook, stirring for 1 min.
  2. Stir in mushrooms and saute for 4-5 mins, until tender.
  3. Pour in the cream. Cook, stirring, until the sauce boils. Reduce heat and simmer for 3-4 mins, until sauce thickens. Season to taste. Stir in the chives and serve on toast with asparagus.
