  • 80g butter 
  • 5 medium red onions, halved, thinly sliced 
  • Pinch of salt 
  • 100g brown sugar 
  • 185ml red wine vinegar 

Instructions

  1. Melt the butter in a large saucepan over medium-high heat until foaming. Add the onion and salt, and cook, stirring, for 15 minutes or until soft.
  2. Add the sugar and cook, stirring, for 5 minutes or until sugar dissolves. Add the red wine vinegar and bring to the boil. Reduce heat to low and simmer, uncovered, for 20 minutes or until the mixture thickens. Remove from heat and serve immediately.
