Lemon and oregano haloumi

Prepare these lemon and herb haloumi as part of an antipasto platter.

Ingredients:
- 1 tbsp extra virgin olive oil
- 3 sprigs fresh oregano, torn
- 4 strips lemon rind
- 250g block haloumi, sliced
- 2 tsp lemon juice
Instructions
- Heat oil in a large non-stick frying pan over medium-high heat. Add oregano and lemon rind. Toss in oil for 2 minutes to allow flavours to develop.
- Add haloumi to pan. Cook for 2 to 3 minutes each side or until golden. Transfer haloumi, lemon rind and oregano to platter. Season with pepper. Drizzle with lemon juice. Serve immediately.
